Grant Collins from Zeta Bar at the Hilton Hotel Sydney captures the spirit of Tokyo in this cocktail.

Ingredients

  • 2 Muddled Plums

  • 45 ml Choya plum wine

  • 10 ml Belvedere Vodka

  • 5 ml Sake

  • 10 ml Midori

  • 25 ml Lemon Juice

  • 5 ml sugar syrup

  • Crème de Mure To float

Method

  • 1.

    Muddle fruit, add ingredients

  • 2.

    Shake & strain over ice

  • 3.

    Serve in a old fashioned

  • 4.

    No garnish
