Melt the butter in a saucepan over a low heat. Add the flour and cook for a few minutes without browning. Add the milk and cook for 4-5 minutes until thickened, stirring the mixture with a whisk to remove any lumps. Add the cheese and stir to combine. Remove the pan from the heat.
Grill or pan fry the bacon to your liking.
On each slice of bread, place mustard, bacon, sauce and the egg, finishing off with a sprinkle of chives.
