Try this delicious recipe from River Cottage 


  • 1 tbsp butter

  • 1 tbsp chickpea or plain flour

  • ¾ cup milk

  • 2 x duck or chicken eggs, fried

  • 130g grated cheddar cheese

  • 2 slices sour dough bread

  • Dijon mustard (enough for 4 slices of bread)

  • 4 slices streaky bacon

  • Bunch of chives


  • 1.

    Melt the butter in a saucepan over a low heat. Add the flour and cook for a few minutes without browning. Add the milk and cook for 4-5 minutes until thickened, stirring the mixture with a whisk to remove any lumps. Add the cheese and stir to combine. Remove the pan from the heat.

  • 2.

    Grill or pan fry the bacon to your liking.

  • 3.

    On each slice of bread, place mustard, bacon, sauce and the egg, finishing off with a sprinkle of chives.

We had this for our Christmas breakfast. A little drop of (completely unauthentic) tabasco sauce made this even better but it really isn't needed, however cracked pepper was. I do recommend that you make the bacon crunchy because everything else (even the toast after the sauce is put on it) is very smooth and velvety and it benefits from a bit of texture. Also, don't forget the chives. They add a nice freshness to the the very rich, but very satisfying and tasty breakfast..
