Try this delicious recipe from River Cottage Australia.
Lightly grease a baking tray and preheat your oven to 200C.
In a bowl combine the flour and salt, then make a well and pour in the buttermilk (or milk). Combine to form a loose dough. If the dough feels too dry slowly add water until you get the desired consistency. Shape the dough into a round and lightly flour before placing on the baking tray.
Bake for 35–40 minutes or until golden brown. Another way to tell if your damper is ready is to tap the base – if it sounds hollow, its done.
Serve with butter and tea.
Note: While this recipe is for making Damper in an oven, the instructions are the same for making it on a coal fire, except that you will need a pot with a lid rather than a baking tray.
