Place spring onion and chilli into a bowl of water to make them curl. These can be stored in the fridge until ready to serve.
To make the prik nam plaa, place fish sauce in a small serving bowl and add chillies.
Make 4-5 diagonal slices across fish fillets. Place lime slices and garlic over fish. Stuff fish with kaffir limes leaves, spring onion and coriander. Wrap fish in banana leaves or foil.
Place fish parcel onto a charcoal or BBQ grill. Cook for 10 minutes each side or until cooked through. Open up fish parcel and place spring onion and chilli garnish on top. Serve with prik nam plaa sauce and rice.
