Grapow Moo (Pork and Holy Basil Stir-fry)

Ingredients

  • 2 long red chillies, sliced

  • 2 prik ki noo chillies (small hot chillies)

  • 8 small Thai garlic cloves (4 large garlic cloves)

  • 2 Tbsp vegetable oil.

  • 1 brown onion, sliced

  • 300g pork mince

  • 3 Tbsp fish sauce

  • 2 tsp sugar

  • 1 Tbsp oyster sauce

  • ½ cup holy basil leaves

  • 1 fried egg

Method

  • 1.

    Use a mortar and pestle to pound chillies and garlic to a rough paste.

  • 2.

    Heat oil in a wok over high heat. Add the chilli garlic paste and onion and stir-fry for about two minutes. Add pork mince, fish sauce and sugar. Stir-fry until pork is just cooked. Stir through oyster sauce and holy basil.

  • 3.

    Ladle onto a plate and top with a fried egg.
