Try this delicious recipe from Marion Grasby as seen on "Marion's Thailand"
Place coconut milk, galangal, lemongrass and lime leaves in a saucepan and bring to the boil. Add chicken and simmer for 10 minutes or until chicken is cooked through. Add mushrooms and chillies and simmer for another 2 minutes.
Add fish sauce, sugar and lime juice. Ladle into bowls, top with spring onions and serve warm.
