Mimosa Eggs


  • 4 eggs

  • 2-3 teaspoons mayonnaise

  • a pinch of curry powder

  • .5 green onion or shallot, minced

  • a scant sprinkle of paprika


  • 1.

    Put eggs in a pot of cold water, set it on the stove, and bring to the boil uncovered.

  • 2.

    As soon as you see bubbles, turn off heat, slap on lid, and leave 10 minutes.

  • 3.

    Drain the eggs and give them a shock under cold running water.

  • 4.


  • 5.

    Halve the eggs and remove the yolks.

  • 6.

    Mash them with mayonnaise and curry powder to taste.

  • 7.

    Season with salt and pepper, and a little chopped green onion.

  • 8.

    Stuff the whites with the yolk mixture and arrange on a serving platter.

  • 9.

    Sprinkle with paprika before serving.
