To make the paste: In a wok fry of the paste ingredients in a little oil until fragrant. Add the fish sauce and the palm sugar and continue to cook while stirring until the mixture caramelizes and goes thick. Add the prawns and stir until cooked then add the kaffir, lemongrass, shallot, coriander and the fried shallots. Add the duck and stir for around a minute.
Place mixture in a bowl and allow to cool in the refrigerator. When cool spoon on to the watermelon squares and serve
