Macedonian Tarator Yoghurt Soup

Tarator Yoghurt Soup is a traditional Macedonian recipe for a classic cold soup made from a blend of yoghurt, water, cucumber, garlic, walnuts, dill and olive oil. The full recipe is presented here and I hope you enjoy this classic dish from Macedonia: Tarator Yoghurt Soup.

Ingredients

  • 240ml plain yoghurt 240ml water 1/2 cucumber, peeled and cut into bite-sized pieces (remove any seeds) 1 tbsp fresh dill, chopped 1 garlic clove, minced 35g walnuts, chopped 1 tsp olive oil

Method

    Combine the water and yoghurt in a bowl and whisk until smooth. Stir in the cucumber then add the dill, garlic and walnuts. Season to taste, stir to combine then cover with clingfilm and refrigerate for at least 60 minutes to chill. Turn into a serving bowl, drizzle the olive oil over the top then take to the table.
