This is a traditional recipe from Macedonia for a classic salad of chopped cucumber mixed with sour cream and flavoured with garlic and dill or parsley.


  • 1 large cucumber 500g sour cream 1 garlic clove, minced salt and freshly-ground black pepper, to taste fresh dill or parsley, finely chopped (to taste) 1 tbsp oil (optional)

    Wash and peel the cucumber then chop into small dice. Place in a bowl, add the sour cream and stir thoroughly to combine. Add the minced garlic then season to taste with the dill (or parsley), salt and black pepper. Mix well, turn into a serving bowl and bring to the table.
