Try this delicious recipe courtesy of The Mango Kitchen where you will find recipes based on ingredients that are organic and sourced locally.


  • 1 beetroot

  • 1 kiwi

  • 1 avocado

  • 1 handful of alfalfa sprouts

  • For the dressing:

  • 1 tbsp pumpkin seeds

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 2 thin slices of lemon (cut into quarters)

  • 1 slice of kiwi


  • 1.

    Prepare the dressing first by mixing the olive oil, apple cider vinegar, 1 slice of kiwi, 1 slice of lemon and the pumpkin seeds. Mix in a small jar or a bowl and let it stand for a short while.

  • 2.

    Grate the beetroot using a normal grater or a mandolin grater, slice the kiwi and the avocado.

  • 3.

    Place the grated beetroot on a plate along with the sliced kiwi, avocado, alfalfa sprouts and the sliced lemons. Pour the dressing over and serve.
