Prepare the dressing first by mixing the olive oil, apple cider vinegar, 1 slice of kiwi, 1 slice of lemon and the pumpkin seeds. Mix in a small jar or a bowl and let it stand for a short while.
Grate the beetroot using a normal grater or a mandolin grater, slice the kiwi and the avocado.
Place the grated beetroot on a plate along with the sliced kiwi, avocado, alfalfa sprouts and the sliced lemons. Pour the dressing over and serve.
