Tomato Baked Eggs with Soldiers

Try this delicious recipe from Dani Venn as part of the Live Below The Line initiative


  • 2 eggs

  • 2 slices bread

  • 2 tablespoons canned tomato


  • 1.

    Preheat oven to 180 degrees.

  • 2.

    Place tomato in a shallow, small baking dish. Crack two eggs on top and place on a baking tray in the oven. Cook for about 25 minutes or to your liking.

  • 3.

    Toast two slices of bread, cut into ‘soldiers’ and serve with baked eggs.
