• 1 pastry baked

  • 2 tablespoons crème fraiche (optional)

  • 2 tablespoons grainy Mustard

  • handfuls of grated gruyere cheese

  • 3 Tomatoes cored and sliced

  • Salt & Pepper

  • chopped fresh Thyme or dried herbes de Provence

  • Olive Oil or melted butter, for drizzling


  • 1.

    Heat the oven to 400°F/200ºC.

  • 2.

    Stir together the cream and mustard, and smear over the tart base.

  • 3.

    Lay the tomato slices on top.

  • 4.

    Season with salt and pepper, and scatter over the herbs.

  • 5.

    Drizzle over the olive oil.

  • 6.

    Bake until the cheese has melted, and the tomatoes are hot and soft.

  • 7.

    Serve warm.
