Basil Pesto

This quick recipe is perfect for whipping up a quick dip that will delight and impress your guests.


  • 2 cups basil leaves

  • 2 medium shallots, peeled (or green onions work too)

  • ¼ cup olive oil

  • 2 garlic cloves, peeled

  • ½ cup cashews

  • Juice 1 lemon

  • Salt & pepper to taste


  • 1.

    Soak the cashews for 1-4 hours in water. Then place all ingredients in a food processor or blender, and process until creamy and very well blended.

    Store in a sealed container in the fridge for up to a week. Or cover with a layer of oil and freeze.
