Breakfast Dried Fruit Compote

This versatile dish can be enjoyed at any time of the day and will keep for at least a week in the fridge. It makes a delicious breakfast with yoghurt and muesli or porridge, you can even use it in an upside-down or butter cake.

Ingredients

  • 700g mixed dried fruit (choose from apricots, pears, peaches, prunes, apples, figs, etc)

  • 500ml water

  • 300ml apple juice

  • 200ml verjuice

  • 1 lemon, zest only

  • 1 vanilla bean, split

Method

  • 1.

    Add all the ingredients, except the fruit, to a large saucepan and cook over a high heat for 5 minutes, stirring. Bring to the boil, then reduce the heat and add the dried fruit.

  • 2.

    Simmer over very low heat, partly covered, for 50 minutes, stirring occasionally. Keep an eye on the compote – if it gets too dry, add a little more water.

  • 3.

    Serve warm or cold.
