The plank roasted Salmon is a signature dish at Cloudy Bay Fish Co. and has been available since its launch in 2010. The salmon is baked whole and served on a wooden board, which gives it a unique smoky flavour, and is delicious hot or cold.


  • Salmon Sides (quantities are per 1kg)

  • 1 x wood board untreated & unglued and sized larger than salmon fillet but also so it can fit a roasting tray (Cedar, Maple or Oak)

  • King Salmon fillet: approx 1kg

  • 10g Murray River Pink Salt

  • 10g Caster Sugar

  • 3g White Pepper

  • 3g Lemon Thyme


  • 1.

    Preheat oven to 250 degrees – it is important that the oven be hot.

  • 2.

    Soak the wooden roasting board in water overnight. Pat dry and lightly oil surface.

  • 3.

    Pin bone salmon. Leave skin on.

  • 4.

    Place on oiled board in shallow roasting tray.

  • 5.

    Sprinkle salt, pepper and caster sugar over presentation side.

  • 6.

    Leave sit at room temp for 20 minutes.

  • 7.

    Sprinkle lemon thyme over salmon.

  • 8.

    Roast in 250 degrees preheated convection oven for 15 min dry heat. - Serve on wood on presentation tray with salad or steamed vegetables.
