The plank roasted Salmon is a signature dish at Cloudy Bay Fish Co. and has been available since its launch in 2010. The salmon is baked whole and served on a wooden board, which gives it a unique smoky flavour, and is delicious hot or cold.
Preheat oven to 250 degrees – it is important that the oven be hot.
Soak the wooden roasting board in water overnight. Pat dry and lightly oil surface.
Pin bone salmon. Leave skin on.
Place on oiled board in shallow roasting tray.
Sprinkle salt, pepper and caster sugar over presentation side.
Leave sit at room temp for 20 minutes.
Sprinkle lemon thyme over salmon.
Roast in 250 degrees preheated convection oven for 15 min dry heat. - Serve on wood on presentation tray with salad or steamed vegetables.
