Peter cooked a special dinner in March for The Australian Cancer Research Foundation and for special guests Crown Prince Frederik and Crown Princess Mary of Denmark on their visit to Australia. This was one of the dishes.
Mix mango, coconut flesh, chilli, lime juice & Thai basil to make salsa.
Place 2 tablespoons of salsa in the bottom of a martini glass, top with 3 slices of lobster, then dress with the coconut dressing.
Add a touch more salsa on top and finish with the Kaffir lime leaf julienne.
Mix all ingredients together.
