Fitness Blogger Connie Richards shares a gluton free, low fat and delicious recipe for Scotch Eggs!
Preheat oven to 170c
Boil 4 eggs until cooked
While eggs are cooking in a bowel mix together turkey mince, ½ a grated zucchini, mushrooms (grated), garlic clove crushed, Chilli flakes desired amount for taste and one egg to bind the mixture.
De-shell boiled eggs and wrap turkey mixture around the entire egg. Place into baking tray and into oven for 20mins or until brown.
Serve and enjoy.
