Charcuterie Tasting Plate

A popular starters to get the palate working.Serves 4.

Ingredients

  • 100g (12 slices) thinly sliced Spanish salami

  • 100g (12 slices) thinly sliced beef salami

  • 100g (12 slices) thinly sliced prosciutto

  • 12 cornichons

  • 1 tablespoon (20g) coarsely chopped mustard fruits

  • 12 thin slices baguette

Method

  • 1.

    Lightly mound salamis and prosciutto onto a large plate. Scatter cornichons and mustard fruit around and over the meats.

  • 2.

    Place baguette slices at the edge of the plate.

Notes

Note: Mustard fruits are a glace fruit finished in a mustard syrup in the cooking process, giving the fruits a sweet but intensely hot flavour. Cornichons are baby pickled gherkin cucumbers. Mustard fruits and cornichons and help cut through the fattiness of the meats. They are available from selected supermarkets, delicatessens and specialty food stores, such as Simon Johnson.
