Marinated Chevre

Ingredients

  • 500 g chèvre cut into 2.5 cm-thick rounds

  • 2 Bay leaves

  • 2 teaspoons black peppercorns

  • 3 sprigs Thyme

  • 4 Cloves Garlic peeled

  • 1 Lemon Zest

  • Olive Oil to cover

Method

  • 1.

    Put everything but the oil into a sterilized jar.

  • 2.

    Pour over enough olive oil to cover.

  • 3.

    Seal and refrigerate.

  • 4.

    This will keep for about a month.
