The perfect pavlova.
Separate egg whites and mix at high speed for 7 minutes.
Slow add castor sugar and continue to mix for 7 minutes.
Add vanilla essence and lemon juice and mix in.
Prepare a baking tray and line with baking paper.
Spead mixture over paper 50mm thick.
Cook in preheated oven at 140 deg for 35 to 40 minutes.
Test by sticking knife and it comming out clean.
It should be crunchy on the outside and quite soft on the inside.
Top with fresh whipped cream and fruit.
