  • 3 Egg whites

  • 1 pinch cream of tartare

  • 40ml Thickened Cream (full fat - whips better)

  • 20g Natvia

  • 1 drop yellow food colouring (organic)

  • 1 drop red food colouring (organic)

  • 10 Raspberries (can use 1/2 strawberries instead if preferred)

  • 20 silver cake decorating balls


  • 1.

    Pre-heat over to 110 degrees C.

  • 2.

    Beat egg whites & cream of tartare until fluffy, gradually add Natvia and continue to beat until white peaks form.

  • 3.

    Separate mixture and add food colouring to half mix then stir through until even. (should look like a "tanned" skin colour)

  • 4.

    Using the white egg mix, place 10 dollops onto baking paper to form the beard, keeping a little leftover for the moustache.

  • 5.

    Using the tanned egg mix, spoon a rounded scoop onto each white dollop forming the face.

  • 6.

    Using the remaining white egg mix "create" a little moustache.

  • 7.

    Place 2 silver balls on each face for eyes and place into oven, cook for 45-50min until outside is crispy. Take out when ready.

  • 8.

    Whip Cream until white & fluffy.

  • 9.

    When cooled, scoop a little dollop of whipped cream on each head, then place a raspberry on top - that's his Santa Hat!


Each Santa contains only 20 calories, 1.4g Fat, 1.2g Protein, 0.3g Carbs, almost Zero Sugar (since there is Natvia!), yet so sweet and ADORABLE!!
