Strawberry Meringues by Samala


  • 4 egg whites

  • 10 teaspoons Natvia

  • Pinch of cream of tartar/tartaric acid

  • Drop of red food colouring (organic)

  • Drop of strawberry essence

  • 1.

    Preheat oven at 120°C.

  • 2.

    Beat the egg whites with cream of tartar till stiff peaks form.

  • 3.

    Add Natvia spoon by spoon at little intervals (not too slow, and don’t need to whisk the eggs thoroughly after each addition)

  • 4.

    Beat the eggs till the mixture stiffens and becomes less airy and quite thick and glossy.

  • 5.

    Rub the mixture between fingers to ensure the Natvia has dissolved.

  • 6.

    Add the food colouring and essence and beat some more to mix the colouring.

  • 7.

    Pipe or spoon on baking tray lined with baking paper and immediately reduce heat to 80-90°C

  • 8.

    Do not open door while baking

  • 9.

    Bake for 1.5-2 hours.

  • 10.

    Once the baking time is up, leave them in the oven to cool but do not open the oven door.

  • 11.

    Wait till they are completely cool.


PREPARATION: 15 minutes, COOKING: 140 minutes
