Impossible Pie with a Peach Twist by Glenys F.


  • 2 cups (500ml) milk

  • 1 cup (90g) desiccated coconut

  • 4 eggs

  • 1 teaspoon vanilla essence

  • 1/2 cup plain flour

  • 120g butter

  • 3/4 cup Natvia

  • 1/2 tin of peaches in natural juice roughly cut.


  • 1.

    Place all the ingredients ( milk, coconut, eggs, vanilla, flour, butter and Natvia ) in a mixing bowl (or blender)

  • 2.

    Mix well.

  • 3.

    Pour into a greased and floured 25cm pie plate.

  • 4.

    Bake in a pre heated oven set at 180 degrees for 35 to 45 (depending on your oven) minutes or until golden brown.

  • 5.

    Test with sharp knife or skewer to make sure cooked in middle.


1/4 teaspoon ground nutmeg is optional to sprinkle over top before putting in oven.

Instead of 2 cups milk, I often use 1 cup milk and 1 cup fruit juice.

Peaches can be substituted for any tinned fruits. I have used Pineapple, Fruit Salad Mix, Two Fruits and also Pears.

2 cups of fresh fruit berries,or bananas, mangoes etc can also be used.
