Christmas Spiced Currant Muffins by David L.


  • 1¼ cups self-raising flour

  • 6 weetbix, crushed

  • 1? cups black or red currants

  • 1 egg, lightly beaten

  • 3 tablespoons butter, melted

  • 1 cup milk

  • 1 teaspoon cinnamon

  • ½ teaspoon mixed spice

  • ½ teaspoon ground ginger

  • ? Cup Natvia


  • 1.

    Preheat the oven to 180ºC line a 12 hole muffin tray. Sift the flour into a large bowl and add the cinnamon, mixed spice and ginger. Add the Natvia, weetbix and currants, and stir through.

  • 2.

    Whisk together the egg, butter and milk in a jug, then add to the dry ingredients and mix together well. Spoon into the prepared muffin tray holes and bake for 30 minutes.


PREPARATION: 15 minutes, COOKING: 30 minutes
