Fat Free Banana and Pineapple Cake by Caroline T.*


  • 3 egg whites

  • 4 large ripe bananas

  • 1/2 cup freshly crushed pineapple

  • 1/2 cup applesauce

  • 1/4 cup Natvia

  • 1 1/2 cup plain flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract


  • 1.

    Mash the bananas in a large mixing bowl

  • 2.

    Add into the bowl the pineapple, applesauce, Natvia, flour, baking powder, baking soda and vanilla extract

  • 3.

    Mix to combine

  • 4.

    Whip egg whites till stiff peaks

  • 5.

    Fold egg whites into banana mixture

  • 6.

    Bake at 170 degrees Celsius for 18 minutes


Garnish with a pineapple flower (as seen in photo) by dehydrating thinly sliced pineapple in oven at 100 degrees for about 1 hour. Place dehydrated pineapples into cupcake molds to form shape of a flower
