• 1 kg Aubergine

  • Olive Oil

  • Salt & Pepper

  • freshly chopped Parsley


  • 1.

    Thinly slice the aubergines and brush both sides of each slice with olive oil.

  • 2.

    Season with salt and pepper.

  • 3.

    Lay on a baking sheet and bake in a 500ºF/260ºC oven about 15 minutes per side.

  • 4.

    Toss with salt, pepper, olive oil and freshly chopped parsley.

  • 5.

    Serve warm or at room temperature.


*These can also be done in a sauté pan on the stovetop, but it's tricky. The oven method is tidier and yields more consistent results.
