To make the marinade, finely chop mint, chilli, ginger, 1 clove garlic, zest of 1 lemon and the juice, good drizzle of olive oil, salt and pepper. To cook the steak, make sure the grill is really hot!
Seat on both sides for about 3 minutes each. Let the steak rest before slicing it. (This is very important)!
Make some aioli with 2 egg yolks, 1 clove garlic, lemon juice, Dijon mustard and olive oil.
Get a big Turkish loaf of bread and slice in half. Drizzle with olive oil and toast.
Julienne the capsicums and grate the carrot.
To assemble lather the bread with aioli, thinly sliced beef and garnish with capsicum, carrot and coriander.
