Heat wok, add oil and heat. Add ginger, garlic, chillies and onion and stir fry for 1 minute.
Add pork and stir fry for 2 minutes. Add garlic shoots, pepper, sauces, stock and cook for 2 minutes. Add spring onions and peanuts and cook for 1 minute. Serve with rice.
