Stir frys are healthy, delicious and quick to make - try Alvin Quah's version of this pork dish for something a bit different

  • 2 tbsp peanut oil

  • 2 cm knob ginger, peeled and finely sliced

  • 2 garlic cloves, crushed

  • 4 dried red chillies, soaked, drained and chopped

  • 1 onion, peeled and quartered

  • 500g pork fillet, sliced thinly

  • 5 garlic stems, cut into 4 cm batons

  • Freshly ground white pepper

  • 2 tbsp oyster sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp Asian Cooking Caramel

  • 3 tbsp chicken stock

  • 3 spring onions, cut into 4 cm lengths

  • 1 tbsp unsalted peanuts


  • 1.

    Heat wok, add oil and heat. Add ginger, garlic, chillies and onion and stir fry for 1 minute.

  • 2.

    Add pork and stir fry for 2 minutes. Add garlic shoots, pepper, sauces, stock and cook for 2 minutes. Add spring onions and peanuts and cook for 1 minute. Serve with rice.
