Pork Cutlets with Tofu Dressing

Time: 25 minutes. Serves: 4

Ingredients

  • 4 x 200g pork cutlets, trim off all fat

  • Salt and pepper to season

  • Tofu Dressing

  • 1 cup silken tofu (you can also use avocado)

  • 2 tbsp olive oil

  • 2 cloves garlic

  • 1 tsp honey or Agave nectar

  • ½ tsp pepper

  • 4 tbsp fresh lemon juice

  • 1 tbsp of miso paste

  • ¼ cup fresh herbs

  • Water to thin if necessary

Method

  • 1.

    Heat a griddle pan or BBQ to a medium to high heat. Cook the pork on each side for approx. 4-5 minutes.

  • 2.

    In a food processor blend all the tofu ingredients until smooth.

  • 3.

    Serve the pork with steamed vegetable and the tofu dressing pour over the top.
