  • 2 kg baby goat meat on the bone

  • 1 Onion sliced thin

  • 4 heads crushed Garlic

  • 1 teaspoon chopped Rosemary

  • 1 teaspoon chopped Sage

  • Salt

  • Pepper

  • 1 cup white wine

  • 0.5 cup grated Pecorino Cheese

  • 100 ml Extra Virgin Olive Oil

  • 1 handful fresh Basil

  • 1 handful fresh Oregano


  • 1.

    In a cassorole dish combine all ingredients and mix through.

  • 2.

    Adding wine and Extra Virgin Oil.

  • 3.

    Cover with foil.

  • 4.

    Cook in a moderate oven [200 deg cel] for 2 hours or

  • 5.

    Until tender but no longer.

  • 6.

    1 hour into cooking remove foil allowing meat to brown.

  • 7.

    OPTIONAL: Add cubes of peeled potatoes or other vege at start of cooking with meat.
