Festive Fruitcake Muffins

Ingredients

  • 220g almond meal

  • 30g Natvia

  • 1 egg

  • 1 teaspoon vanilla essence

  • 30g margarine (melted)

  • 250mL buttermilk

  • 200g mixed dried fruit

  • Grated rind and juice of 1 Orange

  • 1 teaspoon baking powder

  • For decoration:

  • 100g white chocolate (melted)

  • 6 glace cherries (halved)

Method

  • 1.

    Pre-heat oven to 170 degrees C.

  • 2.

    Place 12 festive patty pans into a 12-hole muffin tray.

  • 3.

    Mix almond meal, Natvia and baking powder in a bowl. Add egg, vanilla, melted margarine, orange juice, orange rind and buttermilk. Mix well.

  • 4.

    Stir through the dried fruit.

  • 5.

    Divide mixture between the 12 patty pans.

  • 6.

    Bake for approx. 25 minutes (until firm and golden).

  • 7.

    Cool on a wire rack for 15 min.

    Decorate with a dot of melted w

Notes

Orange juice can be substituted with 1/4 cup brandy or sherry. White Chocolate can be substituted with Natvia icing.

PREPARATION: 20 minutes, COOKING: 25 minutes; MAKES 12 muffins
