  • ¼ cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon Natvia

  • Salt and pepper to taste

  • 1 bunch watercress, sprigs removed

  • 4 honey pears, unpeeled, cored, quartered lengthways, then halved if large pears

  • 2 avocados, peeled, cut into wedges

  • ? cup fresh mint leaves

  • 40g parmesan, shaved


  • 1.

    Combine oil, vinegar, Natvia, salt and pepper in a jug. Set aside.

  • 2.

    Combine watercress sprigs, pear wedges, avocado and mint leavesin a large bowl. Transfer to a platter.

  • 3.

    Add dressing just before serving.

  • 4.

    Top with shaved parmesan and serve.
