A gorgeous Gourmet Garden recipe of scrumptious salad infused with the favours of Mexico.
Pre heat BBQ grill to medium heat.
In a bowl combine oil, lime juice, Gourmet Garden Garlic, Corriander, Chili and Parsley. Toss with chicken and marinate for at least 30 minutes.
On the pre heated grill cook chicken breasts for 8 minutes or until chicken is cooked through (no longer pink inside) and golden brown. Remove from heat and slice in strips and set aside.
In a small bowl place all ingredient for the dressing. Stir until fully combined.
Combine chopped pepper, onion & tomatoes with the dressing.
Divide shredded lettuce among the plates, top with the vegetables, cooked chicken and a sprinkling of cheddar cheese. Serve immediately!
