Chicken Fajita Salad with Garlic, Coriander and Chilli

A gorgeous Gourmet Garden recipe of scrumptious salad infused with the favours of Mexico.


  • 1 tbsp (15mL) olive oil

  • 1 tbsp (15mL) lime juice

  • 1 tbsp (15mL) Gourmet Garden Garlic

  • 1 tbsp (15mL) Gourmet Garden Corriander

  • 1 tsp (5mL) Gourmet Garden Chili

  • 1 tsp (5mL) Gourmet Garden Parsley

  • 4 boneless skinless chicken breasts, cut into thin strips

  • 1 red pepper, roughly chopped

  • 1 red onion, roughly chopped

  • 3 large tomatoes, roughly chopped

  • 1 head iceberg lettuce, shredded

  • 1/2 cup (125mL) low fat shredded cheddar cheese

  • Cilantro Lime Dressing:

  • 1 tbsp (15mL) Gourmet Garden Cilantro

  • 1 tsp (5mL) Gourmet Garden Chili

  • 1/2 cup (125mL) low fat or fat-free sour cream

  • 1 1/2 tbsp (22mL) lime juice

  • 1/4 tsp (2mL) ground cumin


  • 1.

    Pre heat BBQ grill to medium heat.

  • 2.

    In a bowl combine oil, lime juice, Gourmet Garden Garlic, Corriander, Chili and Parsley. Toss with chicken and marinate for at least 30 minutes.

  • 3.

    On the pre heated grill cook chicken breasts for 8 minutes or until chicken is cooked through (no longer pink inside) and golden brown. Remove from heat and slice in strips and set aside.

  • 4.

    In a small bowl place all ingredient for the dressing. Stir until fully combined.

  • 5.

    Combine chopped pepper, onion & tomatoes with the dressing.

  • 6.

    Divide shredded lettuce among the plates, top with the vegetables, cooked chicken and a sprinkling of cheddar cheese. Serve immediately!
