Yia Yia’s Pastitso with Crunch Feta and Tomato Salad

Ingredients

  • 400g Long Macaroni

  • 1 tbsp. butter

  • 2 cup mozzarella

  • Meat Sauce

  • 1 Large onion Chopped

  • 1 garlic clove crunched

  • 2 tbsp. olive oil

  • 500g Beef Mince

  • 3 tbsp. tomato Paste

  • 1/4 cup red wine

  • ½ cup beef stock

  • Salt and pepper

  • Cream Sauce

  • 3 Cups of Milk

  • 5 tbsp. spoons Cornflour

  • 1 tbsp. butter

  • 3 Eggs

  • ¼ teaspoon Nutmeg

  • Crunchy Feta and Tomato Salad

  • 2 tablespoons olive oil

  • 4 Roma Tomatoes Diced

  • 1 Large Cucumber Diced

  • 100g Feta Diced

  • ½ Cup Blacked pitted Olives

  • ½ cup Crotons

  • ½ teaspoon Parsley

  • 1 teaspoon balsamic vinegar

Method

  • 1.

    Cook Macaroni in boiling salted water until just tender

  • 2.

    Drain and return to Pot

  • 3.

    Add the 1 cup of mozzarella and butter to pasta, toss well then keep aside

  • Meat Sauce:

  • 1.

    Gentle fry onion and garlic in olive oil until onion is soft increase heat and add mince.

  • 2.

    Stir well and cook until meat begins to brown

  • 3.

    Add remaining meat sauce ingredients cover and simmer over a gentle heat for 10 minutes

  • Cream Sauce:

  • 1.

    Add milk and cornflour and bring to the boil, stirring constantly until thick

  • 2.

    Crack eggs in a bowl and give them a quick stir

  • 3.

    Take off the heat add eggs and butter and stir for 1 minute

  • To Assemble Pastitso:

  • 1.

    Pre heat oven at 200 degrees

  • 2.

    Butter a oven dish

  • 3.

    Spoon half the prepared macaroni and a little cream sauce level it out

  • 4.

    Cover next with meat sauce and level out

  • 5.

    Cover with remaining macaroni level and cover with remain cup of mozzarella

  • 6.

    Pour cream sauce over to cover all the macaroni

  • 7.

    Sprinkle with the nutmeg

  • 8.

    Cook in oven for 40 minutes or until golden brown

  • Crunchy Feta and Tomato Salad:

  • 1.

    Wash and roughly dice up vegetables place in a bowl

  • 2.

    Cut up the feta place in the bowl and olives

  • 3.

    Pour over olive oil and vinegar

  • 4.

    Toss the salad to make sure it is coated

  • 5.

    Place on top croutons and sprinkle with parsley

  • 6.

    Serve with main meal
