Zucchini Cerebrum Fritter and a Roman Stack of Meatballs, Pudding and Prawns

In this episode of Come Dine With Me Australia, Alexi Spyridis cooks a entree for those that like a challenge - a Zucchini Cerebrum Fritter and a Roman Stack of Meatballs, Pudding and Prawns

Ingredients

  • Pea Puree

  • 15 fresh peas

  • 1 pinch salt

  • 3 leave basil

  • 2 teaspoons olive oil

  • Zucchini Cerebrum

  • 2 trays zucchini flowers

  • 3 lamb brains

  • ¼ cup flour

  • ½ cup parmesan cheese

  • ½ cup pecorino cheese

  • 1 egg

  • 8 basil leaves

  • 2 tablespoons chopped parsley

  • 1 tablespoon salt

  • 1 tablespoon pepper

  • 1 fresh chilli

  • 1/2 cup vegetable oil

  • Black Pudding Pila Stack

  • 1 black pudding

  • 2 lambs testicles

  • 4 Prawns

  • 1 clove garlic

  • 1 tablespoon butter

  • 1 pinch salt

  • 1 pinch pepper

  • 1 tablespoon reduced balsamic

  • 1 nip brandy

Method

  • Pea Puree:

  • 1.

    Blanche peas in hot water for 1 minute and put in bowl

  • 2.

    Add salt, basil, olive oil and blend until pureed

  • 3.

    Using a cooking brush spread pea puree on 4 serving plates, covering entire plate

  • Zucchini Cerebrum:

  • 1.

    Combine chopped zucchini flowers, grated zucchini stems, chopped brains, parmesan cheese, pecorino cheese, chopped basil, chopped parsley, chopped chilli, salt, egg and pepper and mix

  • 2.

    Put oil in fry pan, using a tablespoon, scoop mixture and fry until golden brown

  • 3.

    Let rest on cooking towel

  • 4.

    To serve, place 1 Zucchini Cerebrum on each of the serving plates already coated with pea puree

  • Black Pudding Pila Stack :

  • 1.

    Slice black pudding 4 x 8mm, slice lamb testicle 8 x 8mm, peel prawns

  • 2.

    Put butter in fry pan and fry garlic until golden brown, add brandy, add black pudding, lamb testicles and prawns and fry until cooked through add salt

  • 3.

    Slice scallops in half

  • 4.

    Stack 1 piece of black pudding, 1 piece of testicle, 1 prawn, 1 piece of testicle, drizzle with reduced balsamic

  • 5.

    To serve, place 1 stack on each serving plates already with pea puree and Zucchini Cerebrum
