Orange, Pomegranate and Honey Baklava

This sweet rich, sweet pastry made of layers


  • 1/2 cup sugar

  • 1/4 cup water

  • 1/4 cup pomegranate juice

  • 1/4 cup fresh orange juice

  • 1 orange zest

  • ¼ cup honey

  • Baklava

  • 1.5 cups of walnuts

  • 2 tsp. cinnamon

  • 2 tbsp. breadcrumbs

  • Butter

  • Chilled filo pastry from the supermarket


  • 1.

    On Med-High heat add Sugar, Water, Pomegranate juice, orange juice, zest. Dissolve sugar and bring to light boil. Strain mixture then add Honey and reduce to simmer.

  • Baklava:

  • 1.

    Crush walnuts; add cinnamon, breadcrumbs, 1 tbsp. sugar. Mix together.

  • 2.

    Lay out one sheet of pastry, brush with butter. Sprinkle walnuts mix over the whole sheet. Constantine sheet then curl in to form a circle. Place a teaspoon of the walnut mix full in the middle of the circle.

  • 3.

    Place on a greased tray in an 180c-preheated oven for 15-20 mins.

  • 4.

    Re-heat the syrup and pour over the baklavas before serving.
