These spinach and feta triangles are light, tasty and as well as making a delicious entree, would be right at home on a serving platter as h'orderves. Tom Evangelidis shows us how...


  • One bunch English spinach

  • 300g Feta cheese

  • Chilled filo pastry from the supermarket

  • 150 grams de-salted butter

  • 2 whole eggs

  • ½ tsp. pepper

  • Grape Tomatoes

  • 1 Lebanese Cucumber

  • 1 Spanish onion

  • 5 kalamata Olives

  • 1tps Balsamic

  • Drizzle Olive oil


  • 1.

    Chop spinach (drain any moisture) and crumble feta into a bowl. Add eggs, pepper and mix.

  • 2.

    Lay out 2 layers of pastry, brush with each butter and place filling at one corner. Fold corner to corner. Brush completed triangle. Poke 2 holes in the pastry. Place on a tray for 15 to 20 mins in a preheated oven at 180c.

  • 3.

    Chop cucumber, tomato, onions, and olives in very small pieces. Combine with olive oil and balsamic.
