If you're looking for an exotic dessert, go no further than Eve Gatt's Coconut Kahuna's - naturally delcious and healthy, bursting with fruit and tropical ingrediants


  • Coconut Kahuna’s

  • 200 ml thickened cream

  • 80 grams castor sugar

  • 1 tablespoons of gelatine

  • 150 ml of boiling water

  • 400 ml of canned coconut milk

  • 2 teaspoons of rum

  • 2 teaspoons of shredded coconut

  • Molokai Fruit Salad

  • Mango

  • Strawberry

  • Honey dew melon

  • Pineapple

  • Kiwi fruit

  • Passionfruit


  • 1.

    Place sugar and cream in a pot on the stove stirring until sugar is dissolved

  • 2.

    Remove from heat

  • 3.

    Dissolve gelatine in hot water and pour in to mixture

  • 4.

    Add can of coconut cream, rum and shredded coconut

  • 5.

    Pour in to parfait glasses or ramekins and set in fridge for at least four hours

  • Molokai Fruit Salad:

  • 1.

    Cut up fruit in to desired size

  • 2.

    Cut a pineapple in half sideways and scoop out flesh of pineapple

  • 3.

    Fill pineapple with fruit for serving

  • 4.

    Use seasonal fruit or to suit taste
