Try this easy, fresh and healthy stir fry from Come Dine With Me Australia's Sharon Hacker
Wash all vegetables. Place a saucepan with steaming capabilities half full of water on the stove on low heat and add vegetables.
Cut broccoli into smaller sections and put in the steamer. Cut snow peas in thirds and add to steamer. Peel carrot and then cut into thin circular disks.
Cut up mushrooms and capsicum into small sections. Once all the vegetables are in the saucepan place the cover on top and allow the water to boil and the vegetables to steam. Cook for 6 min or until tender. Remove saucepan from heat and remove steamer and lid and set beside stove.
Place a different saucepan on the stove on medium to high heat and add sesame oil. Cook the mushrooms for approximately 4 minutes, then add the capsicum and stir through. Finally, add the other half of oil and vegetables from the steamer. Once cooked sprinkle sesame seeds on top.
Place frypan on medium heat. Add oil and then schnitzels and fry for 5 min or till crisped on one side, flip and leave for 4 minutes or until crisp. Flip again if necessary to stop burning. Before removing from frypan cut into thin strips.
Place strips decoratively on top of vegetables.
Using a microwavable rice steamer add rice and warm water and add the stock cube. Stir till fully dissolved.
Put in microwave. Program it to high heat for 12 minutes. After time remove and open lid and stir thoroughly then replace lid and leave to stand for 3 minutes. Test grains and if more time needed put back in for 3 minutes. Remove and stir and allow to stand with lid for 2 minutes if needed. Ready to serve.
