Ingredients

  • Slice 200gms of Smoked Salmon

  • 1 avocado

  • 1 capsicum

  • 1 carrot

  • Sauce

  • 1 tbsp. mayonnaise

  • ½ tsp. horseradish

  • ¼ tsp. wasabi

Method

  • 1.

    Wash capsicum and carrot and peel carrot.

  • 2.

    Slice red capsicum into thin slivers and keep separate. Using fine side of grater, grate half of the carrot.

  • 3.

    Cut avocado into slivers. Keep all cut up ingredients separate.

  • 4.

    Slice a salmon into long rectangular pieces approx. 5cm long and 2cm wide.

  • 5.

    Place a piece of the cut salmon on a board and at one end add a slice of avocado, then 2 or 3 slices of capsicum, then spoon a 1/4 teaspoon of prepared sauce and add a pinch of grated carrot. Roll all the added ingredients together inside the salmon.

  • 6.

    Use a toothpick to hold it closed.

  • Sauce:

  • 1.

    Blend the mayonnaise and horseradish in a small bowl using a spoon until you have an even consistency. Once you have the consistency add wasabi and blend thoroughly.

  • 2.

    Allow sauce to ferment for at least 30 min
