Bring beef to room temperature .Place in a 190 degrees pre heated oven in baking dish and cook for 60 minutes. Remove and rest.
Slice beef into large steaks and serve with potatoes and salad.
Cucumber and Coriander Salad :
Slice cucumber into ribbons and place in bowl with torn coriander leaves.
Peel and cut potatoes into pieces. Coat with softened goose fat and roast at 190 degrees for 60 minutes
Combine grated ginger, chopped chilli, sesame oil, soy sauce and juice of 1 lime.
Dress salad just before serving.
