Cape Grim Dry Aged Rib Eye Roast with Roast Potatoes and Cucumber and Coriander Salad with Asian Dressing

The unusual pairing of rib eye with an asian inspired salad, as prepared by Andrew Dawes will surprise and impress

Ingredients

  • 1.5 kg dry aged rib eye roast

  • Cucumber and Coriander Salad

  • 3 cucumbers

  • 2 bunches coriander

  • Roasted Potatoes

  • 700 grams potatoes

  • Tbsp. goose fat

  • Asian Dressing

  • 2cm piece fresh ginger

  • 2 teaspoons sesame oil

  • 3 teaspoons soy sauce

  • 1 fresh red chilli

  • 1 lime

Method

  • 1.

    Bring beef to room temperature .Place in a 190 degrees pre heated oven in baking dish and cook for 60 minutes. Remove and rest.

  • 2.

    Slice beef into large steaks and serve with potatoes and salad.

  • Cucumber and Coriander Salad :

  • 1.

    Slice cucumber into ribbons and place in bowl with torn coriander leaves.

  • Roasted Potatoes:

  • 1.

    Peel and cut potatoes into pieces. Coat with softened goose fat and roast at 190 degrees for 60 minutes

  • Asian Dressing:

  • 1.

    Combine grated ginger, chopped chilli, sesame oil, soy sauce and juice of 1 lime.

  • 2.

    Dress salad just before serving.
