This simple, yet classic Italian dish will always impress. On Come Dine With Me Australia, Myles Farmer puts his spin on this much-loved favourite


  • 4 ripe tomatoes

  • 2 tablespoons of white sugar

  • dash balsamic vinegar

  • a small handful of chopped parsley

  • small handful basil

  • 1 chopped Spanish onion

  • I loaf fresh sour dough


  • 1.

    Preheat oven 200

  • 2.

    Dice tomatoes onions and finely chop parsley and basil

  • 3.

    Cut sourdough into thick slices and place in the over

  • 4.

    Combine diced tomatoes parsley basil balsamic vinegar and sugar in a mixing bowl

  • 5.

    Take out the bread once lightly toasted and spoon a generous amount of the tomato mixture onto each slice top with a light drizzle of olive oil
