Baked KRC Premium Leg Ham with Cranberry and Balsamic Glaze and Lemon Garlic Greens

Ingredients

  • Christmas Ham

  • KR Castlemaine Premium Cooked on Bone Leg Ham (3.5-5kg)

  • Cranberry and Balsamic Glaze

  • 275g jar cranberry sauce (or redcurrant jelly)

  • 2 tbsp balsamic vinegar

  • 1/4 cup cranberry juice

  • Pomegranate seeds to garnish

  • Mix together over a low heat until well combined.

  • Greens with Garlic, balsamic, Lemon and Almonds

  • 600g broccolini, trimmed

  • 300g green beans, topped & tailed

  • 3 cups fresh or frozen peas or snap peas

  • 100g butter

  • 4 cloves garlic, thinly sliced

  • 2 tbs finely grated lemon rind

  • 2 tbsp lemon juice

  • 1/2 cup flaked almonds

  • Sea salt and cracked black pepper to taste

Method

  • Cranberry and Balsamic Glaze:

  • 1.

    Mix together over a low heat until well combined.

  • Christmas Ham:

  • 1.

    Pre-heat oven to 160-170 degrees.

  • 2.

    Prepare KRC Premium Leg Ham (remove rind using finger tips and leave fat exposed).

  • 3.

    Score fat in diamond pattern, 5mm deep.

  • 4.

    Place KRC Premium Leg Ham in a deep foil dish or lined baking dish.

  • 5.

    Brush with cranberry glaze before placing in the pre-heated oven, then baste frequently during 1 1/2 - 2 hours cooking time.

  • 6.

    Garnish with pomegranate seeds.

  • Greens with Garlic, balsamic, Lemon and Almonds:

  • 1.

    Bring a large saucepan of salted water to the boil. Add the broccolini and green beans and cook for 3- 4 minutes. Add the peas and cook a further 2 minutes. Drain and set aside.

  • 2.

    Heat the butter in a large non-stick frying pan over a high heat. Add the garlic and cook for 30 seconds until lightly golden. Add the lemon rind, juice, broccolini, beans, peas and almonds and toss to coat. Sprinkle with balsamic vinegar if desired.

  • 3.

    Sprinkle with salt and pepper to serve.

Notes

Christmas Ham Serves: 8 - 10, Preparation time: 20 minutes, Cooking time: 1 1/2 - 2 hours.
Greens with Garlic, Balsamic, Lemon and Almonds Serves: 8, Preparation time: 15 minutes, Cooking time: 10 – 15 minutes.
