This beautiful delectable Smoked Salmon dish is amazingly healthy. With the accompaniment of a Red Cabbage Salad with Wasabi Vinaigrette it’s a winning recipe when trying to be health conscious.
For the vinaigrette, whisk the mustard, wasabi, mirin and vinegar. While continually whisking, slowly pour in the oil. Now add the cubed cucumber.
On a large serving platter arrange the salmon in one even layer. Lightly toss the cabbage and fennel through a couple of teaspoons of vinaigrette and distribute over the salmon. Just before serving drizzle the rest of the dressing.
