This basting sauce is great to make and refridgerate for a quick sauce in the matter of minutes. Its tasty with garlic and chilli hints that go perfectly with all meats.


  • 250mL light soy

  • 50mL water

  • 2 long red chilies, seeds removed and roughly chopped

  • ½ cup brown sugar

  • 1 tbsp grated ginger

  • 1 kaffir lime leaf

  • 4 cloves garlic, grated


  • 1.

    Put all the ingredients into a small pan and put it on a medium heat to reduce for about 15 minutes. Blitz the sauce with a stick blender.

    The sauce will keep in the fridge for a few months
