Be sure to leave plenty of time for this delicious rocky road to refrigerate before serving. Wrapped up in a small box or tissue, this would also make a very tasty gift! Danielle Swain from shows us how to put it together.


  • 1 cup chocolate biscuit crumbs

  • ¼ cup almond meal

  • ½ cup butter, melted

  • 500g cream cheese

  • ½ cup castor sugar

  • 400g toblerone milk chocolate

  • ½ cup thickened cream

  • 2 tsps. gelatine dissolved with ¼ cup of boiling water


  • 1.

    Combine biscuit crumbs, melted butter and almond meal.

  • 2.

    Line a pie dish with cling wrap and lightly grease with butter.

  • 3.

    Press crumbs evenly into pie dish, then chill base in fridge to set.

  • 4.

    Beat cream cheese with an electric mixer until smooth.

  • 5.

    Add sugar, melted chocolate, gelatine and cream and continue beating until combined.

  • 6.

    Pour onto the crumb base and refrigerate for approximately 3hrs until set.

  • 7.

    Top with chocolate garnish and serve with a fresh strawberry.

I noticed Danielle also made something that she said it forms 3 layers.... Where is that, I see it on the plate BUT not as a recipe :( Please could we have that 1 :)
