A Saucy Cheese Sandwich

PR Guru and social commentator Prue Macsween whips up a fun entree that’s sure to get hearts racing, as seen on Celebrity Come Dine With Me Australia


  • Parmesan Tuiles

  • 30 heaped tablespoons of grated parmesan

  • 1/4 teaspoon cayenne powder

  • Salad

  • 200 grams of rocket

  • 2 large avocados

  • 200 grams of halved walnuts

  • 2 tablespoons of walnut oil

  • Sandwich

  • 4 thin slices of prosciutto (cut to fit the tuiles)

  • Caramelised balsamic

  • Edible flowers

  • 4 figs


  • Parmesan Tuiles :

  • 1.

    Pre heat oven to approximately 350 degrees

  • 2.

    Allow three heaped tablespoons of grated parmesan for each tuile. We need 10 for four people (allowing for 2 spares in case of accidents!)

  • 3.

    Mix with a 1/4 teaspoon of cayenne powder.

  • 4.

    Place in cookie cutter ring mould on baking paper on flat tray. Don't put them too close together

  • 5.

    Put in pre-heated oven to 350 degrees for approximately 12 mins.

  • 6.

    Once cooked, let cool in cookie mould.

  • Salad:

  • 1.

    For salad combine 2 large handfuls of rocket, two large sliced avocados, 2 tablespoons of halved walnuts in a bowl and sprinkle over some walnut oil.

  • Sandwich:

  • 1.

    Assemble sandwich by placing cooled tuile in centre of plate, layering a piece of prosciutto on each, followed by the salad. Place another tuile on the top. Do not do this too early as it will make the tuile soggy.

  • 2.

    Decorate the plate with blobs of caramelised balsamic and sprinkle with a few edible flowers and a cut fig.
