Soak the raisins in warm water.
Add capers then purée and pass through a fine strainer.
Cut cauliflower heads into small bits.
Combine butter & milk in a pan and then soften the cauliflower in the pan.
Strain the cauliflower and make it into a liquid
Add salt & pepper to taste and strain again and serve warm.
Slowly heat up the raisin vinaigrette to serve.
Sear the scallops in a pan with olive oil.
Serve with dressed salad. .
Place small spoonful’s of puréed cauliflower around the edges of the plate, pop the scallops on top and serve with the salad in the middle.
Pour the warm vinaigrette and serve immediately.
