Preheat oven to 180°C
Place 1 cup semi dried tomatoes in food processor/blender
Spread some Dijon mustard on to the fatty sides of the lamb rack and then pat on the semi dried tomato mixture.
Stand one rack up against another by interlocking the bones and cook in oven for approximately 40 minutes.
Crunchy Roast Potatoes :
Preheat oven to 200°C
Peel potatoes and cut into quarters. Bring big saucepan of water to the boil and add potatoes. Boil for 15 mins. Check with fork that potatoes are tender. Drain water. Use a fork to rough up edges of potatoes (to make crunchy)
Pour extra virgin olive oil into a large roasting pan (1/2 cm deep approx.)
Grind pink rock salt into the oil.
Place roasting pan into oven for 5 mins to heat oil. Then add potatoes using tongs to turn and coat them in the oil.
Grind more pink rock salt over the top then roast for 40 mins turn then roast for a further 30 mins or until golden and crunchy
Garlic Butter Asparagus :
Steam asparagus until it is heated through and still crunchy
Sauté oil and butter over medium heat. Add garlic and cook for about 20-30 seconds.
Place asparagus on a dish, pour garlic butter sauce over, add salt and pepper
